Prawns with Tagliatelle, Lemon, Chilli & Rocket
This delicious and easy pasta recipe combines tender prawns, fresh rocket, zesty lemon and chilli. It's a sure fire winner in any household!
400 g tagliatelle
2 tbsp olive oil
3 cloves of garlic crushed
1 red chilli deseeded and finely chopped
500 g Shore Mariner raw prawn cutlets thawed
1 lemon zest and juice
120 g rocket
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions. Drain the pasta and set it aside.
In a large frying pan, heat the olive oil over medium heat. Add the garlic and chilli. Cook for about 1-2 minutes until the garlic becomes fragrant.
Add the prawns to the pan and cook for 2-3 minutes on each side just until they turn pink and are cooked through.
Once the prawns are cooked, add the lemon zest and lemon juice to the pan and season with a good sprinkle of salt.
Toss the cooked and drained pasta into the pan with the prawns, garlic, and lemon mixture. Gently mix everything together until the pasta is well coated.
Add the rocket leaves to the pan and give it a final toss. The heat from the pasta and prawns will wilt the rocket slightly.
Serve in shallow bowls.
